In a cereal grain the single cotyledon of embryo is represented by -Cereals are monocotyledons, so their embryo has only one cotyledon.
In the grass family this single cotyledon is a shield-shaped structure called the scutellum, situated on one (lateral) side of the embryonal axis.
The scutellum absorbs the digested food from the endosperm and passes it to the growing embryo.
At its lower end the embryonal axis has the radicle and root cap enclosed in an undifferentiated sheath called the coleorhiza.
The portion of the axis above the attachment of the scutellum is the epicotyl; it has the shoot apex and a few leaf primordia enclosed in a hollow foliar structure, the coleoptile.
So the single cotyledon is represented by the scutellum.
